Lime and Coconut Loaf

125g butter
225g caster sugar
1 tsp lime rind
2 eggs
40ml lime juice (about two limes)
30g desiccated coconut
210g milk
225g SR Flour
Preheat oven to 170 degrees

Beat butter for 10 seconds on speed 5
Add sugar and rind beat for further 20 seconds on speed 5
With the thermo on speed 4 add the eggs one at a time through the lid until well mixed, approx 30 seconds
Add the remaining ingredients and mix with the aid of a spatula until well combined, approx 20 seconds on speed 3-4.
Pour into lined loaf tin and bake for 55 minutes.

VHJ - This is a lovely cake Charabelle. Soft, moist & very tasty. The kids haven't tried it yet and I'm not sure if they will like it but I certainly do. I drizzled a runny icing sugar & lime juice mix over the top & would be very happy serving this for an afternoon tea. Thank you very much for posting the recipe.

AmandaM - Made this for a work morning tea, and it is really lovely and light in texture.

Brunette - I doubled the coconut because I love it and added a crunchy lime drizzle topping. It is absolutely gorgeous. Thank you for the recipe.

KathD11 - it came out almost too crumbly (like you couldn't pick up a slice for fear it would fall apart in your hand) - but very moist and soft. Does anyone know what I did wrong?

Obbie -  I use lemon juice and coconut. I also have made this into mini muffin size as well. Freezes well.

This sounds delicious. I have just been given a few limes so may well give it a go. DH doesn't like coconut but I don't think he will taste this as it is so little.
May all dairy items in your fridge be of questionable vintage.

I made this today - I doubled the coconut because I love it and added a crunchy lime drizzle topping.

I made this one the other day but it came out almost too crumbly (like you couldnt pick up a slice for fear it would fall apart in your hand) - but very moist and soft. Does anyone know what I did wrong?
