Brown Sugar Pudding

Brown Sugar Pudding:
Serves 4-6:
Ingredients:
180g hot water
180g brown sugar
Mis these and place into the bottom of an oven proof dish. Stir to dissolve the sugar.
2 eggs
60g raw sugar
3 tablespoons melted butter
1 teaspoon vanilla
120g self raising flour
100g milk
1 teaspoon baking powder
½ cup sultanas


Preparation:
Place eggs, vanilla and sugar into the bowl and beat for 2 minutes on speed 5.
Add melted butter. Mix for 5 seconds on speed 5.
Add remaining ingredients, except sultanas and mix for 10 seconds on speed 5.
Add the sultanas. Mix on reverse for 5 seconds, speed 2.
Pour over the sugar mixture and bake for 35-40 minutes at 180o.
This forms a sauce under the batter with sultanas in it and is nice with custard, icecream or cream.

Tips/Hints:
Mum used to make this a lot when we were kids. I sent it in to Tenina at budget busters time so you may have seen it before.

CarolineJ - I have this in the oven right now but my hand slipped when I was pouring the brown sugar in and we ended up with 260g instead of 180g. I hope it is ok!!
Will serve with custard, and review later.

the way i'm looking at it is maybe if we have steamed fish and veg for main course, we would deserve to have something calorie laden for dessert   ;)

Sounds like a good balance to me CP63  ;) ;)   I do have to admit to going one step further than that at times though.  Main meal for lunch and dessert for tea  :-)) :-))

Cookie, I was just about to convert a pud recipe when I realized that it was your Brown Sugar Pud.  with a sliced banana in the bottom of the dish and a mashed banana stirred through the batter.   Now how about that? ;D ;D
