Crispy Sourdough Waffles

The night before:

110g butter
220g milk

Place both ingredients into TMX bowl. 3 mins, 90 degrees, speed 2 (length of time may need to be adjusted depending on how cold the butter was to start with!  :D)

Leave to cool to around room temperature (although I use it when it's down to 37 deg.  ;))

Add:

250g active sourdough starter
1 tsp salt
1 packed tablespoon rapadura sugar
170g flour (I use a mix of rye and stoneground unbleached wheat sometimes with lupin added).

Mix on speed 3 for 30 seconds until well combined.

Place into a large (preferably non metallic bowl) and cover loosely overnight.

In the morning:

Whisk in:
1/2 tsp bicarb
2 eggs (I have left out the eggs before with no ill effects for my egg allergic 3yo.  8))

Oil hot *waffle iron and pour on 1/2 cup of mixture to cook until crispy and brown. 

Serve with freshly whipped cream and maple syrup...or toppings of your choice!

*alternatively, cook the batter in a frypan as crispy pancakes!

Ceejay, the original source said some people find them not sweet enough.  How did you find them with just a tablespoon sugar in them?  Is the maple syrup enough to sweeten them?

We use them for sweet and savoury JD so I've never actually made the waffles sweet as such.

The maple syrup is plenty of sweetness to add I find... I've also fed them to guests (adults and children alike) and they've been a hit there too.  *waves to Rach*  :)

My kids love them as they are (the youngest 3 in particular - 8, 5 & 3)..just a touch of sweetness but I guess it's an individual thing really.  :-*

I make these whenever I have excess starter (since I dislike throwing it away  ;)) and find they freeze well for toasting later.  8)

Talking about waffles - any ideas on a good waffle maker? ???

If I was buying a new one Sylvia, I'd be looking at the Sunbeam Belgian waffle iron or perhaps the Cusinart as I'd be concerned with how hot a temperature the others could reach effectively.  :-\

I had these for breakfast this morning Ceejay and they were delicious.  The recipe made 10, I cooked them for 2.5 minutes & served them with pure maple syrup and quirkyjo's cashew cream (link below).  I have been meaning to do these for a while now but kept forgetting to do the prep work the night before  :P :P  Thank you so much for posting this recipe.

No, not me Cookie.  The sourdough starter came from Chookie, the recipe came from Ceejay, the cream came from Quirky Jo and Mr Breville made the waffle maker so I am only the middle man in this little exercise  :P :P ;) ;)

Great idea for using the excess starter !!!  It really does seem silly to put it outin compost as some do.

Children are all ok JD & Thermomixer, just pushed it a bit doing 7 appointments for 2 of them in one day... trying to save on travelling time.  :-\  :-*
