Parsley Fish With Potatoes (with photo)

Let me confess: I don't like cleaning/removing spine of the fish!!! That's why I use fish fillets in my fish recipes. I did so also in this one. If you like you can steam your fısh as whole. In the original recipe 2 seabass fish (aka branzino or spigola) are used. Each weighs 300g.

IMPORTANT! : The size of the fish and potatoes will determine cooking time!




Parsley Fish With Potatoes

Ingredients:
20g parsley leaves (10+10)
2 cloves of garlic (1+1)
600g fish
Salt, black pepper
500g potatoes
40g extra virgin olive oil - EVO (10+30)
350-400g water
5 cherry tomatoes

Preparation:
    * Chop 10g of parsley for 5 seconds on Speed 6 and set aside
    * Chop the remaining 10g of parsley and 1 clove of garlic for 5 seconds on Speed 7
    * Wet baking paper under the tap water and then squeeze well by your hands (do it gently not to tear the paper) Place it in Varoma Tray
    * Place fish in Varoma Tray. Spread parsley-garlic mixture, sprinkle with a little salt and pepper. Drizzle 10g of EVO. Close on the top by folding over the baking paper

    * Cut potatoes into small pieces and place in Varoma Bowl (If you cut into big pieces it would take longer to cook)
    * Put water, tomatoes, previously chopped parsley, the remaining 30g of EVO and 1 clove of garlic in TM Bowl. Adjust salt and pepper. Place Varoma Bowl and Varoma Tray. Cook for 20-30 minutes at Varoma Temperature on Speed 1
    * Place fish and potatoes into a serving plate, pour the sauce over and then serve into plates

Thanks farfallina. We still have some fish that we caught on holidays in the freezer so I may give this a try.
I let DH clean all our fish, he says I leave too much meat on the bones.

Cookie in the original recipe they use fish as a whole. They just put it there to steam with bones. You clean it when it is served in your plate. Well, this doesn't work for me and DH cos we both don't like cleaning fish. So I use frozen boneless fish fillets. I sure defrost them before I use ;)

Blimey! Cookie your DH sounds very much like mine in the likes and dislikes of food.Mine's not keen on salmon either.He's not called Martin as well is he???

No, afraid not. I often make dishes that have salmon or smoked salmon cooked and broken up in them and he'll eat those!!!!!!!! He loves the risotto with it in and a fried rice thing I do. You can't really hide it because of the colour. He will eat Australian salmon which isn't the pink colour and is quite an unusual fish, but nice. (we get it from a fisherman down the south coast)

I don't think we can't get Australian Salmon here in the U.K. otherwise I would try it.My DH isn't a great risotto fan but likes the Chicken,Rice and Vegetable recipe from the F&E cookbook, which is "risottoish"

Most people don't like the salmon that they get down on the south west coast.  I think it is mainly caught for pet food. In Tassie I think they have the Atlantic salmon which is delicious.

It's Coley that are caught in the seas around the U.K. that people aren't keen on here.Mind you it does look a bit unappetising on the fishmongers counter but is tasty in a fish pie. ;)

Thanks farfallina - I like cooking the fish whole, but generally have to then fillet it before MrsT sees the head & tail. 

You know how much I love my Varoma  :-* :-* :-* :-*  so this is a great idea
