Spinach & Risoni

Name of Recipe:Spinach & Risoni
Number of People: depends on whether you are using it as a side to meat or on its own - 2 - 4 maybe
Ingredients:
350g spinach, stems removed and cut into 5cm lengths and the leaves roughly sliced
220g celery, cut into 5cm lengths
100g red onion cut into 4
2 cloves garlic
1 tblspn olive oil
50g tomato paste
1 roasted red capsicum, cut into large dice
80g water
425g can chopped tomatoes
100g risoni (small rice-like pasta)

Preparation:
Place the spinach stalks into the TM bowl and chop 2 sec/speed 5. Remove and set aside.
Add the celery and chop 2 sec/speed 5. Remove and add to the stalks.
Add the onion and garlic and chop for 2 sec/speed 5. Add the stalks and celery back into the bowl.
Add oil and saute 8 mins/100o/reverse/speed 1.
Add spinach leaves, tomato paste, red capsicum, water, canned tomatoes and cook for 10 mins/100o/reverse/speed 1. Help it get moving with the aid of the spatula.
Add the risoni and cook a further 10 mins/100o/reverse/speed 1.

Serve as an accompaniment to meat or on it's own sprinkled with grated parmesan.

You will enjoy this one then Cookie.  We had it for lunch with some crumbed fish and DH really enjoyed it which surprised me.

Coles has a risoni that is branded the same as our surname. DH told a gullible friend that we were importing it and branding it with our name. He believed it and even went and bought some to try. :'( :'( If only.

Given the choice I would choose CP63's cream puffs any day but yes, you are right - we must also eat healthy things  ;) ;)

I guess you are right...........that's probably why I go for a long walk each morning too.  I just beat a shower of rain this morning. I hope it rains heaps as we certainly need it.
Eating a healthy diet etc seems to mean so much more as we get a little older. :'( :'( :'( It makes you wish you had thought a little more seriously about it 40 years ago. Thermomix certainly makes eating a healthy diet so easy really.

Creampuffs are very good for you...they have eggs, cream - which contains calcium and is good for the bones. You can even make them healthier by melting chocolate over them because there has been a lot of scientific research proving the health benefits of chocolate. Look in any adverturers Survival Pack and you will find chocolate. Personally, I would rather pop a cream puff in my mouth...  ;) now thats living!
