Problem with basic bread
« on: August 10, 2010, 05:58:51 am »
Hi - I'm a newbie here and hope I am posting to the right area  ???

I made the basic bread recipe out of the EDC on the weekend and I had to add just under 100g extra of water to make it into a dough.  Naturally the bread was heavy and didn't really rise much but was still edible.  I grounded the wheat as the recipe indicates and followed it to a t - what have I done wrong?? :'(

Hi Moons,

I make variations on this bread daily and, thanks to the support of the wonderful people on this forum, it now comes out really well.  I've never had the problem you describe though.  What flour did you use for the 400g?

Welcome to the forum. Personally I don't have a great deal of super success with the EDC recipe.  I like Isi's recipes from the forum.

I haven't made a loaf of this for a long time, but I regularly make rolls from it - love it! I think in Cyndi's 21 day book she adds a pile of fresh herbs to this recipe.

Moons,  the recipe is OK,  the problem is in the method,  (not yours but EDC recipe)   Make it again and if made with all wholemeal flour it will need a bit more water,  but you MUST give it a full double rise for the second rise.  I have posted a photo of what it should look like.   Keep trying and you will get it right.

This is what I do now (based on the advice I got here along with some trial and error) -

Warm oven to 50 degrees celcius then turn off
Mill 100g wheat or buckwheat
Add 100g wholemeal flour, 300g bakers flour and 1tsp salt
2 min/50 deg/speed 3 (to warm the flour)
Add 30g olive oil, 300g warm water, 2.5 tsp dried yeast
10 sec/speed 5
5 min/interval speed  ::
Remove from TMX and hand knead for 1 - 2 mins
Cover (e.g. wrap in bread mat) and put in warmed oven
Leave for 25 - 30 mins for first rise
Remove and hand knead for a couple of minutes to get the air bubbles out
Put in lined bread tin
Cut diagonal lines in the top of the loaf (about 2cm apart and 1cm deep)
Cover the loaf (I put a big tupperware over the top of the tin as you don't want the bread to touch the cover) and put in a warm spot
Leave for 30 mins for the second rise
While doing the second rise preheat the oven to the hottest temperature available.
Also put ice into two oven proof containers (I do about 10 cubes in each)
Once second rise is completed put the loaf in the centre of the oven with ice either side (not underneath)
Immediately turn oven down to 180 degrees
Cook for 30 mins

If I run out of buckwheat or wheat I just use 200g wholemeal flour to 300g of bakers flour.

WOW BB,  you have a perfect recipe here.  If you substitute the Buck wheat  for Wholemeal or white flour you could use just 2 teaspoons of dried yeast.   Welcome to the "Bread Club" ;D ;D ;D

BellaBear you are proof of the saying 'If at first you don't succeed try, try, try again.'  Well done.

Thanks Cookie.  I've always been stubborn so I wasn't about to be defeated by this.  ;)   I've loved the learning curve.  I never knew what joy you could get from producing a loaf of bread out of the most basic of ingredients.
