Jumbo Raisin Drop Cookies

This recipe came from a Canadian neighbour 40 years ago and the original makes twice as many cookies.  I felt it was too much for the TM bowl so have done another batch and halved the quantities.  This recipe makes around 20 cookies about 8cm in diameter.
Grease 2 large trays and either line with baking paper or spray with canola oil spray - either works.
Preheat oven to 180oC.

Ingredients
130g raisins
110g water

110g butter at room temperature
150g sugar - no need to use castor, ordinary works fine


2 eggs

1 tspn vanilla extract
300g self raising flour
1/2 tspn bicarb of soda
25g chopped nuts (I used flaked almonds).  Chop your nuts first if you only have whole nuts.
1/2 tspn salt
3/4 tspn cinnamon
1/4 tspn nutmeg
1/8 tspn allspice

Method
Place raisins and tap water into bowl.  Cook 5 mins/reverse/100o
/soft speed
. Strain the raisins, reserving the liquid.  Cool.
Cream the butter and sugar 30 sec/speed 4.
Place butterfly in place and add the eggs.
Beat 20sec/speed 4, MC off. Remove butterfly.
Add vanilla, flour, bicarb, chopped nuts, salt, cinnamon, nutmeg, allspice and the cooled raisins. Make the reserved liquid up to 50g with water and add that too.
Mix for 20 seconds/speed 4/reverse.
Place heaped dessertspoonsful onto the prepared trays and cook for 12-15 mins minutes or until golden brown.  My first lot took only 13 minutes, this lot took 15 minutes.
Cool on tray for 2 mins then transfer to wire rack until completely cool.

I have made a note further down this page re these cookies going soft and by double baking, those not eaten on the first day came out perfectly.

I have made the jumbo raisin drop cookies- they were really lovely and the taste is a combination of flavours I must have tried before (we have a French-Canadian family friend). I am pleased to report that 18 of out 18 cookies made yesterday have been  demolished. Will make again.

CP - As I was pulling them out of the oven, I thought "wow! these feel really light" as you expect them to be heavier judging by the size of them. They are very delicious and a cross between a biscuit and a cake. Thank you JD.

Gert - I made these for my vegan family visitors using fake egg and they are delicious. They will love them. Thanks for the recipe.

I found these cookies went too soft for my liking after the first day so I have just popped 6 back in a 180oC oven for 10 minutes to crisp up the outside - the inside is still soft as a cookie should be.  As I had made 60 of these cookies and had most of them in the freezer, I can now just take out what I want when I want them (especially when the oven is on for something else).

Oh Judy wouldn't that be fun. How I wish ,but I think there may be many hundreds of entries. In any case I may buy one. I have just bought a Sushezi and have been having fun with that. Very sticky is that sushi rice. I had it all over my kitchen. ;D

I was meant to call you but got too late. I have made the jumbo raisin drop cookies- they were really lovely and the taste is a combination of flavours I must have had tried before (we have a French-Canadian family friend)
