Flavored Mayonnaise

Flavored Mayonnaise
On a recent holiday in South Australia, I noticed some "gourmet' Mayonnaise. I like the texture and taste of the EDC Mayonnaise, so thought these additions would be interesting. When I make the EDC recipe I use 2/3's Rice Bran oil and 1/3 olive oil. This mild flavor lends itself to other flavors.

ADD TO TASTE.

(1) Wasabi

(2) Dill

(3) Coriander, lime(rind and Juice), chilli

(4) Cucumber and capers

When I make Mayonnaise, I leave a little in the bowl and add 1/2 an avocado It will keep in the fridge for a couple of days without discoloring. Makes a good dip and is nice on toast.

Yes I like the idea of the avocado too - love it with cheese on top and grilled.  I bought 4 for $2 the other day and only 1 decent one from the whole lot  >:( >:(

that was nice of you JD to pay them so that you could take away their rubbish  ;D ;D our local independently owned supermarket has such terrible fruit & veges that they are always the last resort whenever i need something. a lot of the produce looks like they scavenged it from the miniskip bin, and i have even seen them in the shop with a sharp knife cutting all the growth out of potato eyes   :o :-)) (is that legal?) makes me wonder what other tricks they have up their sleeves  ???

Catch me on a bad day CP63 and I would have marched right back with them but I was just pleased I found 1 suitable to use. You certainly notice the difference between market fruit/veg and store bought but who can go to the market every week.

JD dont know if you know this but to tell a good avocado ie is it brown inside etc just need to take off the little navel? where the stalk attaches and if its nice green underneath then the whole fruit is good if its not then leave it..saw it on some chef cooking thing over here and it has never steered me wrong!  :)

i think i have never seen a stalk on an store bought avocado yet. they are always removed. i will have a look next time, as i think once it becomes exposed to the air its just brown there. i'll see what i can see...

Just bought one CP63 and there is no stalk. There is no way you can remove the 'plug' left in the top without a knife so unfortunately Frozzie this isn't going to work for us here.

pity ..here we just lift it off with your fingernail for example..if they are ripe there should be no problem..strange that you cant take them off and sometimes when the fruit isnt good they are all off already and brown and then i never buy any!

Nice ideas there Chookie - you certainly do pick up some good tips on your trips  :-* :-* :-* :-*

Frozzie/JD etc - sometimes you will get just a little knob of stalk to pop off.  I have such mixed success that I generally have given up, but MrsT persists and often wins.
