Recipe Review - Poached eggs in tomatoes

Pge 28 A Taste of Vegetarian - this recipe makes  a nice, light meal and would be perfect to serve with steak and chips or with BBQ's. You need to use large tomatoes, mine were not quite big enough and I couldn't put all the egg white in them. Quick, easy and very tasty.  A winner in this house 5/5.

They would be quick and tasty Judy. I'd be happy to leave the egg white out!!!! A great idea.
May all dairy items in your fridge be of questionable vintage.

I might give these a whirl as a friend has just given me a dozen eggs from her hens. A lot more healthy than making cakes with most of them :D :D

CC i so love it when people give me fresh home grown produce -- nothing beats the flavour! mmn enjoy those googgie eggs  :D

Thanks JD.  Unfortunately MrsT cannot stand tomatoes and eggs together !  Something from her childhood.

But I like them - so may sneak some while she's asleep.

This recipe was a real hit with our Boxing Day Brunch guests and I was even asked for the recipe.  I had seen it demonstrated at our advanced class on steaming, but I didn't realise that it came from this book originally.  Thanks for the review, JD.  I can check out the actual instructions now - :).  We were encouraged to use scrunched up baking paper under the eggs and to choose taller (Roma?) tomatoes if they were available.  I did find it safer to spoon the finished tomato eggs on to the plates rather than use tongs, so as to be sure to keep them intact and attractive.

I tried this today and I wished I had read the review first. The same as Judy, my tomatoes were too small and the whites spilled over and the preparation was a little messy. I ended up steaming them on top of little ceramic dishes to catch any overflow. But its worth doing again, it was a healthy and yummy start to the day.  I used boiling water from the kettle to speed things up a bit (reduced the recipe by 5 min) and also cut the little rounded bit from the bottom of the tomato bases so they would sit firmly without rolling.

I wouldn't mind doing a larger version by adding some other goodies like mushrooms and baby spinach, or even some ham for a complete meal.
