Rice milk
« on: September 02, 2010, 11:35:46 pm »
Hi everyone I am awaiting the arrival of my thermomix and am so excited. My son is dairy, soy and egg allergic. He is 11 mths so I cook everything for him and really think this will help :-)

Just wondering I have found a recipe for rice milk however it has almonds or cashews in it. Would I be right in saying if I omitted them and added extra rice it should work??? My sister in law is allergic to nuts so I don't want to take the risk cooking with it.

Cheers

Sair

Hi Sair,
You can just use plain rice - I'd use about 100g per litre of water.  I use nuts in mine just to make it creamy.
You'll love having a Thermomix if your son has allergies - makes life soooo much easier!  We have allergies/intolerances too, and I couldn't bear to be without my 'Thermy'!!  Have fun!  :D

Cheaper und much better than store-bought. When I started to make rice milk from scratch, I used 1/3 of arborio rice. Now we prefer the taste of sprouted  sweet brown rice milk or brown basmati rice milk.

Ingredients:
50 g Rice
1000 g Water

Method:

Pulverise rice for 1 min./speed 10
Add water and warm for 7 min./70°C/speed 4
Blend slowly from speed 4-8 for 40 sec.
Strain through cheese cloth or nutmilk bag and cool before refrigerating

Variation:
- sweeten milk with  2-3 soaked dates, 30 g rice syrup or honey
- add 10 g lecithin, almonds or tahini
- 1 Tsp. coconut oil
- use over night soaked or sprouted rice
