Hi Sair, welcome to the forum. If you are going to make the risotto you may want to also have ingredients for the TM vege stock concentrate also:
200g celery, 2 carrots, onion, 1 tomato, 1 zucchini, 1 garlic clove, 1 bay leaf, basil/sage/rosemary, parsley bunch, 150g rock salt, olive oil.
Im sure being a chef you probably will have these on hand, but its best to be stocked up
