One-Whip Evaporated Milk Ice-Cream

Name of Recipe:One-Whip Evaporated Milk ice-Cream
Number of People: 4 serves
Ingredients:
375ml can Evaporated Milk, chilled (I used full cream evaporated milk)
3 tblspns castor sugar
1 tspn gelatine
1 tblspn boiling water
1 tspn vanilla extract

Preparation:
In a cup, dissolve gelatine in the boiling water and set aside to cool slightly.
Place the castor sugar into the bowl and blitz for 6 sec/speed 8.
Add the milk & gelatine mixture to the bowl and mix for 30 sec/speed 7.
Place into a metal tin (I used a 20cm x 20cm cake tin) and freeze for 2 hours or until mixture starts to freeze around the edges.
Place the mixture back into the TM bowl (chill the bowl beforehand) add vanilla and whip on speed 10 until thick and creamy. I forgot to time myself here but I think it was about 4 minutes.
Return to the freezer until set.

Tips/Hints:
This does not set as hard as a rock.  It is firm with bubbles but can be easily spooned out.
Some of the older members will probably remember their Mother making this when they were young and I found this recipe in a 1960 Australian Womans Weekly cookbook called Cookery In Colour.  It was the only recipe in the whole book I wanted to convert for the TMX.

thanks JD, yes I remember mum making this . We had an Arctic fridge (retro) and there were these funny aluminium ice cube trays that she used to set it in. will have to make this for old times sake to remember what it used to taste like.

 My Mums was a bit icy but the TMX version isn't at all like that.  I think she just beat it with her old Sunbeam Mixmaster.Next time I am going to try it with the light evaporated milk to see if there is a difference but it would have to match the full cream one in texture or I wouldn't bother - would rather wear a few calories with a nicer ice-cream.

CP63 I wouldn't have thought you were that old to remember this recipe  ??? ???

When I saw the heading I immediately thought of making this YEARS ago.  We even had cans of some dry mix to make ice cream.

Then came the tins and no more ice cream making.

I remember this one. Whenever poor Mum made it the kerosene fridge would go out and the icecream wouldn't freeze and all of us horrid kids (3 of us) would whinge and whine about it. :D
May all dairy items in your fridge be of questionable vintage.

I posted almost the same recipe here http://www.forumthermomix.com/index.php?topic=2989.0 back on Feb 11th this year when I did use the light evaporated milk.  So now, at least I know that the full cream evaporated milk is the better option.  It didn't separate during the freezing period like the light one did.  I started remembering that I had read all these comments before then checked my recipe file.

It's amazing that the old and tested recipes work the best JD.Wonderful photo, did your DH eat the ice-cream cone or is it still too cold for him?

I still have my can from when you posted the February one.....glad I waited.  I turned the new computer on (we have been a few weeks in low tech land) to search for some raw recipes....but have been wallowing in traditional ice cream recipes.

I really don't know anything about ice-cream makers Uni but I can't see why not.  Give it a try and let us know.
