Occasionally Cookie but it is faster on the laptop as I can have 2 screens going and work from one to the other without getting lost - I can only do simple things on the iPad like post pictures of congratulations or post a link but not the here type.

Thanks Judy. I have two screens going on the iPad , or more, but the copy paste bit I find fiddly and time consuming. It is easier to go to the main computer if I have to do it.

When you have one screen open on safari, tap the plus sign near the top right. This will give you the opportunity to type in whatever you want for your second screen. Eg glitter graphics. You will then see that you have two things open and you can tap on them to use which ever you want.
I should have perhaps made this clear that it is only when using safari. (As far as I know)

Made this loaf of bread today. Ingredients as per Chookie's recipe. Kneaded in the TMX and baked in breadmaker.

Loaf turned out heavy and chewy, with a thick crust :(

I'm trying to figure out the main culprit to my failed attempt. What did I do wrong...

- Started with instant yeast and cold water. 37c, sp 3, 1:30 min
- Left in the bowl for 5 mins
- Added the rest of ingredients (Defiance bread flour, sugar, salt, water)
- Kneaded for 4 mins
- placed bowl (covered and MC on) near stove. I was simmering some soup, hence thought it should be warm enough.
- dough doubled after about 2 hours
- punched dough. Shaped it for breadmaker pan. Placed in pan that was lined with baking paper
- left the pan in microwave oven uncovered, with a cup of hot water.
- dough rose to 3/4 of pan height after about 1 hour
- made a x on surface of dough, and sprinkled a bit of water
- baked in breadmaker for 1 hour

Will post photo. It's on my phone.

I agree with Uni,  not enough warmth.  If you look at the cross you put in the top ,  it hasn't opened up as it should have if it had risen fully.  I put a heated wheat bag in the bread maker while it is rising for a second time. Also in the cold weather,  you could let it rise more in the bucket.  Keep trying as this is a most convenient way to make a loaf.  Also , as with all bread,  make sure you don't knock the risen loaf as it will knock some of the air out of the dough.
Thanks for posting a photo as it really does help.

The exact details of what you did were also a help BZB - it makes it so simple then for our bread gurus to pinpoint the problem.

Thank you, Chookie and Uni. Judy, I've been turning all the different variable in my head...and I'm so grateful for the guidance :)

Would it be ok to proof the bread outside. It was a sunny day yesterday but I wasn't quite sure.

Is there an easy way to wash the TMX bowl after removing the risen dough? I used the usual method of water above blades, 100C, 20 sec, bicarbonate soda & dishwashing liquid. Brushed and dismantled the whole bowl.

I don't do any of the 'recommended,' processes.  I just fill the bowl with warm water,  let it sit while I form the bread, then put my hand in and swish it around a bit,  tip out water. Same again , until clean.  I only dismantle the whole lot about once a month.  If there is a bit stuck under the blades,  I use a tiny brush that comes with a baby bottle set, or a small brush that Judy gave me which was from Helene.
