Thanks for your method Brum.  I haven't heard of throwing in ice cubes.  Do you throw them into a dish??

Sorry. I didn't make that clear. I have the tin that comes with the oven sitting on the bottom rung of the oven all the time. This would be the one that you'd use to grill your cheese on toast. If you don't have one of these any metal tin will do. When the ice is thrown in it melts on to this tin and creates steam. The loaf is put on one of the shelves above it.  Hope that makes sense.

Thanks B.  Good method and well described..
Chelsea,  have you used this lot of flour with success in other loaves?  Why I ask is that I have just had a bag of very poor quality floor from Laucke. My sister has also just had the same experience.  A loaf Baked with this flour doesn't rise properly and has a flat uneven top.

I will try another brand next time Chookie.  I used Laucke organic bakers flour for two years but have recently swapped over to wallaby. My rolls are going well but loaves definitely aren't.  :)

Chelsea,  I think that they had a bad lot.  Not sure that it is all like this,  Apparently it was stale.  I am using the organic flour for every thing ,  but not bread.  Good in biscuits. I still think Laucke is the best,  unless you can get fresh flour from a local mill.

I must go to the flour mill this week and get more bread flour. Might get a few different sorts for variety. (I need a bigger pantry)

Dede,  you are so lucky to be able to go to a mill.  Remember that the wholemeal will not keep as well as the white.

Thanks Chookie, I didn't know that. Will get a big bag of white, small bag of whole meal and small bag of multigrain. I used to make loaves with half white half whole meal so the kids would eat it. I love multi grain, but the kids are not so keen.

Good that you can buy small bags from the mill dede .. In our local mill its in gros quantities only so min 20 plus kgs

They are available in 5, 12.5 and 20 kg Frozzie at our local flour mill. And much cheaper than the supermarket :)
