Kidneys do they work?
« on: September 06, 2010, 07:35:42 am »
Dare I ask if anyone has a recipe for kidneys that might work in the TMX ?

I know that no one wants to eat at my house but .......

Gretchen,  I'll eat at your house anytime.   Can't see why you couldn't braise kidneys in the TMX. ;D

Gretchen have a look at this recipe
http://www.deliaonline.com/recipes/main-ingredient/meat/offal/lambs-kidneys-in-red-wine.html
The BBC did a programme about Delia Smith some months ago and they invited various cooks to comment on the influence she had on their cooking. One such person was Nigella Lawson and she said that when she was a student she cooked this recipe often, as it was so good and cheap.
I haven't tried it myself, as we hate offal, but I find a lot of her recipes foolproof.Looks easy to convert. ;)
Oops! found another,Fast and Easy Recipe Book, page 125, Kidneys in Sherry- Rognones in Jerez. Can PM you the recipe if you don't have the book. :)

Oh cornish cream I like that recipe and I have everything in the fridge so will be making that for our dinner today. I'll let you know how it goes. No I don't have  that book but let me try this one as I see it is so easy to convert.

Thanks for that. Ain't this forum wunnerful?

Judy doesn't know what she is missing does she chookie?  ;D ;D

Gretchen, it will surprise you that I actually love lamb's fry and will occasionally eat and enjoy a steak and kidney pie but that is the limit of offal for me.  I would come all that way up to you though just to sit and have a drink and a chat with you  :-* :-*

If you came all this way to see me I would not make you eat any offal but I would offer you the drink of your choice.

I am making Nigella's Kidneys. I have just finished cleaning them and my oh my they do stink. Almost put me off. Urine after eating asparagus comes to mind.

I said almost :o :o :o

Enjoy your awful offal Gretchen.
May all dairy items in your fridge be of questionable vintage.

Well they do and they don't work. I think I prefer  them grilled but DH absolutely loved them and was hovering hoping there would be some for brekky on toast tomorrow. There is.

If anyone is interested I will post the recipe which is  based on cornish cream's offering above but really not the same at all.

I will say that the kidneys and mushrooms remained  as they were prepared when done on reverse soft speed which is a good thing to know. The overall look was disgusting.

Definitely not for the offal haters.

Oh yes I will cook kidneys again and again . I do love them but I also  want them to look like kidneys.  The flavour was fine but maybe I was put off by the initial smell. Would love to try another recipe though.  Good fun in the research. I await your recipe.

I think we could do black pudding in the varoma. What do you think?
