The topic JD posted is well worth a read Mel, the short answer is yes and yes. When you make yoghurt, you are effectively cooking the milk first at 80
o- changes everything. The same for butter as apparently (I have only been told this and keep meaning to research it!!) it is the buttermilk that causes the butter to go rancid. Any how I have kept butter for MUCH longer than the useby date and always freeze my butter milk that I don't get to use.
