Chookie, the taste was amazing! My 3 boys loved it.

Don't think I made it perfectly though. Firstly, I wasn't sure about the size of the lumps in the lumpy mixture. Is it still meant to be powdery, like sand? I added more milk when it looked too dry. Ended up with big and small lumps.

Hence, I got lumpy coating on the chicken. Plus the airfryer couldn't cook it evenly enough for a more uniform colour. There were whitish sections which didn't go away.

Will have to improve my processes, as the family wants to eat more of it. They were arguing over the last thigh :D

BZB,  glad the boys liked it.. Mix should be lumpy  and no white powder.  You were right to add more milk.  If I am doing a big batch ,  I make 2 lots as it gets pretty messy with just 1 mix.

Chookie, the next time you make this, could you please please please take pictures of the lumpy flour. Plus the coated chicken before cooking begins. I'm determined to get it right :)

Chookie, I've watched 5 YouTube videos to get the coating technique right.

The similarities in the videos:
- they dipped the chicken in an egg plus milk mixture before dipping into the flour mixture. I think that won't be necessary for this recipe as the pieces came from a buttermilk marinade. But perhaps shake excess marinade off, before dipping into the flour mixture? Hopefully that would avoid the flour from clumping together into big balls
- the repeated egg dip, followed by flour mixture. 2 coatings. I could repeat with buttermilk and flour mixture
- they used their hands for this process. I used tongs :)

BZB,  I certainly use hands.  It is a very messy business.   I hate sticky hands.  I keep a sink of hot water ready for frequent hand washing.  I agree with you,  it doesn't need the egg dip.  I also don't think it needs 2 coats.  I think the tongs might be your problem.  Let me know how you go.

BZB I also think the tongs are the problem, you need to press the mixture on a little which you wouldn't be able to do with tongs
