Chookie - just one question if I may . . in the spice mix, is that 1 Tblsp cardamom - ground, just the seeds or whole pods?

Just the seeds. Or you can use powder but then not as much flavour.

Chookie, it's really quick ! With little kids running around ....... it's gotta be quick ! Also, this is a funny thing ....... I fry the chicken in batches, and put it in the oven on 100 degrees ...... the longer it's in the oven the more it tastes like kfc ! It's like the spices absorb or something.
My parents live down the coast and they've been away for 8 weeks and arrive home on Sunday ! They've really missed the kids and it's a long weekend here, so we're going down to their place on Saturday and staying till Monday to surprise them. But, they will be jetlagged so I said to the kids, we need to organise dinner for Sunday because Nanna will be tired and they won't have any food in the house, so guess what they want to make down the coast ! Yep KFC chicken ! So we'll be making it on Sunday again lol

Deb, That is great. When the GC come to stay during school hols, they all order KFC. It is the only meal where there are no left overs. That is interesting about putting it in the oven.

Chookie, your GC must think you're Super Grandma for making up that recipe ! I'm sure they'll cook it too in years to come !
I made another batch of the spice mix today, so am all stocked up for Sunday !

This has been on my to-do list for ages, & now I think I have finally collected all the spices to make the mix.
DH has seen the recipe and is encouraging me to do it, so.....
On for next week's menu plan...

I'll have to revisit this one. I made it a couple of times and no matter how much I tried to convince everyone it tasted like KFC they weren't buying it and weren't that fussed. I think I may have got the spice mix a little wrong.

I had the same problem wonder they did enjoy it though, after a few months I gave it another go and just called it fried chicken and everyone was happy

I might do that Suzanne, may be I made too much of the fact it was meant to taste like KFC.
