Easy to do Cookie. Cut a large potato in half horizontally, slice right through in 1/2cm slices (keep the shape of the potato), place on a tray using an egglifter then gently push down on the top to cause them to fan out slightly. The plan was to brush them with melted butter, oil and parsley, steam until almost cooked then transfer using the egglifter again to a greased oven tray, sprinkle with parmesan & breadcrumbs & spray with oil. Bake until crisp. When your slices end up all over the kitchen bench you suddenly loose all interest in fancy potatoes
Will try again though as they are really nice for dinner parties.
