Best Dairy Free Cake?

Need to make a dairy free cake for dd's birthday so looking for some recommendations.

Our kids also love Cyndi O'Meara's chocolate cake - it has macadamia oil instead of butter, and I use rice-almond milk in it - it's lovely and moist.   :)

Well this is seeming harder than I thought it would be, lol.
Main issue being I'm allergic to coconut and most dairy free recipes seem to have coconut in them.
Unfortunately I hate pecans (and being peanut allergic I avoid a lot of nuts anyway).
So options.
The gf chocolate banana cake looks lovely and I could make the rice-almond milk. (would it work with the same of normal flour? though I have some gf flour that was given to me that I need to use up anyway but for future reference).

Has anyone made the basic sponge cake in the EDC that is dairy free? Might give that a go and see what it's like.

Icing - I always make butter icing, lol, so anyone know of a dairy (and coconut) free icing? Won't be a kids bday cake without icing.

I would probably choose either the gf banana-choc cake (you can use other flour than gf, and you can make plain rice milk instead of rice-almond if you can't have nuts); or the Cyndi O cake - if you want the recipe let me know.

For a yummy df icing, I sometimes just make the nutella recipe (my nearly df version - if you can use ghee?) and spread that on while hot - or you can just make one that's kind of a thin glaze, with icing sugar (can make your own in tmx), cocoa and rice milk - drizzle it on hot, and it will soak in a bit.

My consultant told me that the basic sponge recipe didn't work and not to try it.  Apparently they are revising it.

Regarding icing, melted chocolate spread over the top and left to set makes a very easy and special icing.  Or carob if you can't eat chocolate, although that isn't quite so tasty.

I often ice buns (cupcakes) this way, it's the family's favourite icing.
As my picture shows, I've suddenly become younger :-)  DD was of the opinion that her picture should be here, not mine!

Yep looked at the thread re the sponge so gave up on that idea. Tried a diff recipe I found but wasn't happy with the result.

Cashew nut cream for the icing?  There are recipes for it in the vegan section - I added a chocolate version I made to that thread too.  It was really tasty.

Jo, made your choc banana cake today and it was lovely (I could have eaten the whole bowl of the mix, lol). And was astounded by how easy and cheap it is to make rice-almond milk!

You're welcome - glad you liked it!  ;D  Yes, home-made rice milk is so much cheaper and nicer than the bought stuff!!!  :P
