Does anyone have one or is there one in any of the books?
Must add mustn't have nuts in it.

Hi Jennifer,
I posted a muesli bar recipe a while ago and I think you can find it under cakes "Easy Muesli Slice'. It does have some nuts in it, but just leave them out and put extra fruit in and it will be fine.

I would like to bump this topic - does anybody have a muesli bar recipe that they know works and does not fall apart. The no nuts thing is a pain as it is essential at many schools. I just can't find a recipe that doesn't fall apart, but maybe it is how I am making them?

I make Muesli bars that don't fall apart, you can easily remove nuts and add what ever you like to the recipe, I like pumpkin seeds, sesame seeds, dates, cranberries etc in mine. Will see if I can find the recipe I use.

Poppa I make the one from In The Mix and it is divine, doesn't fall apart either.
As for the no nuts thing, if a recipe calls for nuts I just substitute an equivalent amount of sunflower seeds, pumpkin seeds, sesame seeds etc - that way you still get a bit of crunch.

Ive been working on a recipe that is evolving. I think it' s almost ready to post, but my oven has ben playing up
I will try and post it after the retreat. It has seeds instead of nuts, cranberries and choc chips. I just need to cook it one more time.

This is my muesli slice recipe with no nuts and it doesn't fall apart. Recipe originated in a magazine, sorry can't remember which one.
Haven't made it in Thermie yet so I cant give you times/speed, etc. It is quick and super easy.
Chewy Muesli Slice
Serves:
12
Ingredients:
50g Unsalted Butter
1/2 cup Caster Sugar
1/4 cup Honey
1/2 cup Rice Bubbles
1/2 cup Rolled Oats
1/2 cup Shredded Coconut
1/2 cup Self Raising Flour
1/2 cup chopped soft and juicy Dried Apricots
1/2 cup Sultanas
1/3 cup Craisins
Method:
Preheat oven 180°C.
Grease a 20cm square cake pan. Line base and sides with baking paper, extending paper 2cm above edges of pan.
Melt butter, caster sugar and honey. Let cool slightly.
Combine remaining ingredients in a large bowl. Add butter mixture and stir well to combine.
Press mixture firmly into prepared pan. Smooth surfaces.
Bake 30 minutes or until golden.
Remove from oven and cool completely in pan.
When cool lift slice out of pan, remove baking paper and cut into squares.
Store in an airtight container until ready to pack into lunch boxes.
