Obbie, I was going to post the recipe then I thought I'd better not do a complete post as it belongs to Dinner Twist. But here's the gist of it:
Oven at 225c
Slice pockets in 600 g chicken breasts
Combine 1 tbsp tomato paste and 2 tbsp red pesto. Divide among the pockets. Season with salt and pepper
Bake until chicken is cooked through, approx 15 mins
Cook spiral pasta
Slice chicken after cooling slightly
Combine pasta with 2-3 tbsp pesto. Serve with chicken and lettuce.
Enjoy!
