Not the best photo, but you get the idea  ;D

Made Nacho Bake from 'Eat in' (Anna Gare).  Made it earlier today I didn't think it was very tasty having a taste test, but letting it sit for even just a couple of hours has increased the flavour.  I've made a note to myself for next time to make it the day before, put it in the baking dish, cover and refrigerate until the following day where I can then top with the nachos and cheese then bake.
Great when you have a few mouths to feed.

Cooked spicy fried chicken yesterday. DS9 wanted another drumstick but he took too long with dinner that I refused his request. He pouted for the rest of the evening. :)

Dinner last night was another recipe from 'Eat in' (Anna Gare).  This one is "Zucchini, feta & prosciutto linguine".  Didn't change anything from the recipe except instead of just adding the uncooked prosciutto to the mix, I cooked it in the dry wok until crisp before cooking the rest of the ingredients.  I then broke it up and added through at the end. I found there was enough oil that came out of the prosciutto that I didn't need to add any extra for cooking the remainder of the ingredients.

Such lovely flavours again in this meal, really enjoyed it.  :)

Truth is I didn't eat anything for dinner. A bit of cheese from Gallo's cheese platter. Then felt so ill we came home. Thank goodness! Such horrible fevers and lethargy. DH has it now :(
