I am on a bit of a "Bollywood Roll" at the moment, have to stop as my freezers will all be full of cooked food again. As it is now getting very busy with little time to cook I am quite happy to have some freezer meals.

We are having this tonight, we wont be home until after 6pm, so I prepared it this morning so I can put it in the oven for 20 mins or so when we come home, the chicken and sauce and rice are all cooked.

The topping is actually cashew nuts and finely sliced onions just sautéed off, next stage to drizzle with ghee and put in the oven. Rice, chicken, coriander, mint, tomatoes and indian spices.

This is what we had for dinner last night. It has a quinoa base and was lovely. I will post the recipe.
May all dairy items in your fridge be of questionable vintage.

DH is arriving home from New Zealand tonight and has just  sent a text requesting an assortment of  curries for dinner tonight so I better start  cooking.  Not yet though as its only 4.30am  ;D

It is when I don't have any fresh lamb and chicken in the house.
Had a power failure while I was in Mandurah a couple of weekends ago and discovered my freezers had defrosted. Had to throw away everything. Loads of precooked meals as well as lots of chicken, lamb and beef. Haven't stocked up yet so I feel like Old Mother Hubbard.

That is a shame MF. Also costly.  OMG I was  just remembering Hally's 5 freezers. Hope her's were ok.
