I found some of Tenina's Parmesan Pastry in the freezer so decided to use it as the pastry for a quiche. I popped a heap of spinach in the microwave and gave it a quick blanch and squeezed all the water out, chopped it and put it in the pastry. Popped some mini tomatoes on the top. Blended 3 eggs, and some cream and milk to make a cup, with a bit of seasoning. Poured it into the quiche and sprinkled with a little cheese. It was yummy.
May all dairy items in your fridge be of questionable vintage.

Thank you. I loved the Parmesan pastry as the base. I didn't put much other cheese in the filling. Now I will have some of the leftovers for lunch.
