We enjoyed this dish too Judy. I didn't do the coleslaw in the thermomix, but I will do next time.

That looks delicious Judy, must check that recipe out.

I made your Marsala chicken yesterday for DH and he really enjoyed it.  My chicken was shredded at the end even though I did cut into big cubes.  Not to worry, I served in a pasta bowl with mash on the bottom and steamed veg over that, then spooned over the chicken and sauce, he thought it was great.  He'll have the same again tonight.  :D

We had Red Rooster chicken and chips last night. We went in to see BIL who is in hospital for most of the afternoon so decided take away would be perfect. It's become quite hot again too.

We were busy shopping for a new washing machine and fridge today and didn't have lunch till 3, so neither of us felt like dinner, even though I made Quirky Jo's Heuvos Rancheros, we couldn't face it, so it will keep for another night.
I just had some fresh pineapple, DH had left over Salad.

Nice satay Judy.
Tonight I made skinnymixers pork belly with apple sauce which was very nice and a simple method to cook pork belly.  I am however really disappointed in my local woollies store. I picked up two pieces of pork belly and when the time came to cook them, one had rind and the other didn't! Both packages were identically labelled and priced. Why would they do that? Shouldn't all pork belly have rind for crackle?

That's a bummer kimmy, certainly either ring the store or send an email I've found ww very good when letting them know of a product or food that hasn't been what I expected and the rind is the most important part of the belly   in my world anyway

Very disappointing not finding the rind on one of those pieces of belly pork Kim.Maybe the butcher preparing the meat got carried away not realizing what they had done.I would see what the supermarket has to say when you tell them.

Am I reading the recipe wrong?  But does the pork belly recipe from Skinny mixers recipe let the fat while steaming drip into the apple sauce. ?

I haven't made any of Skinnymixers recipes. I have bought her two latest books so I really must get going.
I'm very wary of fat and try to reduce it as much as I can, so I will be doing the pork differently too.

I made Skinnymixers all-in-one-chicken dish from her website tonight http://skinnymixers.com.au/skinnymixers-all-in-one-chicken-dinner/ - it was delicious.  I didn't read the recipe correctly and left the paste in the bowl when I added the stock so I had to start all over again and then in my haste to get tea underway I forgot to add some chicken stock powder to the bowl the second time but it was still delicious,  I have added some to the leftover gravy now though.  As you can see, I did throw the piece of chicken into a small pan at the end to add a bit of colour.

I've made that before, but happily mash the potatoes and the recipe I have says not to do it with white potatoes. It comes out sort of gluey and cheesy for some reason - but I like it!
