Chicken parmi and Mexican pasta salad (from the thermofun cook along happening this week). Made my own salsa and it's delicious and super easy. Another jar thingy I can do away with buying.  Salsa recipe can be found here http://thermofun.com/thermofun-salsa-recipe/

I made a lovely meal for myself tonight from the WW 21 day diet planner book called Quick roast pork with apples & sage onions.   You certainly wouldn't think it's from a diet book, so delicious.  :D

Thanks Cookie, the honey-mustard sauce really made it.  Lucky for me I'm having the other serve tonight.  ;D

That parma and salad looks delicious Kimmy, as does your roast pork Juilie.

We are having Sweet & Sour Chicken with rice tonight.  Recipe from Recipe Tin Eats.

Satay chicken noodle salad from RecipeTin Eats http://www.recipetineats.com/satay-chicken-noodle-salad/

I made the coleslaw/carrot salad in the TMX, chopping the 2cm slices of carrot for 3 sec/speed 5 and used only green cabbage chopping that separately for 2 sec/speed 5.

I used 2 confit of garlic in the dressing, roasted sesame oil, the chilli sauce/vinegar option and evaporated coconut milk, reduced the curry to 1 tsp -  I made this in the TMX, mixing it for 20 sec/speed 6.

I only used 185g of the hokkein Singapore noodles but the full quantity of chicken fillet.  In hindsight I guess I could have added more noodles but there seemed plenty enough there for me although it doesn't show much in my photo, it's all hidden underneath the chicken.

I was a bit confused as to what to mix with what at the end.  The picture on the print out showed all 3 elements  positioned separately but the directions are different.  I also wasn't sure whether to add the coleslaw in with everything or not but I felt it needed a dressing so I mixed some of the satay sauce with it.  I've since returned to the site to read the recipe again and obviously you can mix it all up together if you wish.

As with all her recipes, this was a winner.  The satay sauce and coleslaw can be made ahead of time so that the final stage can come together very quickly.
