As my BIL has just had a batch of lambs processed, we ended up with 2 whole lambs for the freezer.....therefore, last night we had lamb chops, eggs, bacon and salad, and tonight we are having a lamb roast dinner!

We had sausage rolls last night. I added broccoli, onion, carrot and a tiny bit of zucchini to my meat. 50/50 sausage mince and mince.

Last night I roasted a heap of Vegies in the AF. Pumpkin, zucchini, red capsicum and mixed them with a cheese sauce. Added some penne from the pasta maker, mixed them and sprinkled a little cheese on too and baked it for 15 minutes. It was delicious.

Sounds delicious Cookie.
This morning I made up a half quantity of this lovely salad, for me to have over 2 nights. Loved doing it in a jar, everything stayed nice, crisp and fresh with the dressing being on the bottom. Will be making more of this sort of thing, I so enjoyed it.
Love being able to make up things early and just having when wanted.
The first photo is not the clearest because of the condensation; best to look at the one on the website, but you can at least see the lovely colours of the salad in the other 2.

Judy, the spinach leaves bulk it out more I think, especially in a shallow bowl. I got through it okay too.
Cookie, a great idea for people wanting to take to work too. There are some gorgeous glass jars around now that have wide openings which would make it even more special. Love stuff like that.
