Thanks for the interesting ideas. Lots here. We are reducing the red meat in each meal. I am loading up recipes with veggies and no complaints so far. The bonus mushrooms that are still growing on the compost have been a real help.

Yes Judy, I'm sure you could freeze the gnocchi. I only made a half of the recipe so that we could eat it all.

Trying to use Varoma more, tonight we had Ginger/honey/soy glazed salmon with Bok Choy, snow peas & Broccolini steamed at same time. Delicious!
Every one's meals sound delicious and interesting, there is so much variety just in the forum alone.

I had the rest of that mushroom stroganoff, adding some stir fried zucchini then tossing it through some pasta - not exactly a 5:2 recipe but I'm not following it at the moment anyway.  I just like some of their ideas then do my own thing with it.

I used up the haloumi cheese I had bought to make zucchini fritters, so tonight may be bacon and broccoli pie. I have both of those in the fridge/freezer.

Cookie, try this recipe for a sticky red onion and sausage bake, it is easy and really tasty, especially if you can get good vegetarian sausages.  I've adapted it a bit to suit our tastes and Australian ingredients (the blogger is based in Scotland).  I par-boil my potatoes then toss them in wth everything else and you pretty well have an all-in-one meal, with the addition of salad or other vegetables

Roasted chicken tonight as I can take the leftover to Cherokee tomorrow for sandwiches.
I have replaced my waffle maker with a machine that makes waffle baskets. I make a double lot, ( 8) and keep the in the fridge or freezer, reheat them , to crisp up, as needed and fill with fruit and ice cream. Can also be used for savoury fillings. Cost $55.

Seems to work well. Only criticism I have is that the bowl is fairly large.
