It sounds like a celebratory dinner Katie.

I had the other half of my chicken schnitzel but with veggies tonight as it's cooler here tonight followed by balsamic & honey figs with ice-cream.

Tonight is chicken breast stuffed with sundried tomatoes, cheese and spinach. I do one large one and this easily serves the three of us. I just slice it up when I serve it. I'll do some carrot, broccoli and potato in some form with it.

A favourite food of mine. We were having a Yorkshire pudding thing with roast vegies on it and cheese, I have now decided that it may not be enough, so I have added fish to the menu.

I have chicken drums marinating in an oven bag ATM, on a tray with fresh potatoes, a whole sweet potato, and some carrot sticks to bake. I'll also do gravy and steamed greens, plus zucchini slice. :D

Cooked zuchinni a different way. Sliced medium size zuchinni in half length wise. Sprinkle with Parmesan and bake until the cheese has melted. The Zuchinni remain crisp. Could sprinkle with Chilli powder if you want it spicy.
