Barbecued pork chops, a few sliced potatoes cooked in the non stick and salad. Lovely caravan food.

Steamed salmon and vegetables with mango salsa. Mango salsa , fresh mango little bit of red pepper, coriander, dash of rice vinegar, salt chilled in the fridge while cooking the fish . The rice vinegar seems to soften the mango .

Katie, the mango salsa sounds nice.
Cream of cauliflower soup with lots of veggies and cubes of chicken breast. Home made chicken stock as the base.

This was last night's dinner, and I was hoping for some leftovers for dinner tonight, all gone
It was a double sized My Favourite Quiche with red salmon and a bunch of asparagus with a large chopped salad (based on Paul Newman's recipe). We currently have an egg and lettuce glut

We had home made pizzas tonight...one of our faves, mainly because kids get to make their own, so generally they eat them happily! Just browsing to find something for tomorrow!
