After seeing Judy's lovely dinner I tried this recipe from RTE https://www.recipetineats.com/one-pan-sausage-and-vegetable-bake-with-gravy/ last night.
I added more to the recipe (probably times one and a half) to fill my big baking dish. The family loved it so it's in the mix of the regular quick and easy meals we have here. Wasn't quick enough to get a photo before they scoffed the lot.  :-))

Tonight's yoga night so we are having meatloaf with potatoes done in the slow cooker, and maybe some frozen veggies thrown in just before I leave :)
