What's for Dinner Tonight?

I made Quirky Cooking Sausage Casserole with dumplings. Prepped everything  in the TM and cooked it in the slow cooker. The dumplings turned out light and fluffy. I used Paprika Chicken Sausages. 😁

Tonight is our last night at the Chadstone Hotel so we are going to get dressed up and will dine at the Scott Picket Restaurant here. Just love the fire cooking that they specialise in. We don’t often get a chance to dress up.

We had fish,  hips and salad last night. Tonight will be a Chicken. leek and mushroom pie as it is a bit cooler here.

DH has made one of his famous Pea soups with one of the hambones from Christmas. It is enormous, it has a packet of split peas in it and 3/4 packet of red lentils. We will have it with the left over haloumi flatbreads from Amanda's blog. https://www.lambsearsandhoney.com/

I started early in preparation of our little bbq today for the 3 of us.  I made 8 hot dog rolls from the Barbecue collection on Cookidoo, then using the High Heat collection, made a half lot of the BBQ onions.
 
DH cleaned up the Weber Q and I cooked some nice sausages to go on the rolls, topped with the onions and a squirt of ketchup.  We all loved it.  I was really happy how everything turned out.

I've got some strips of chicken thighs marinating overnight now for the Skinnymixers recipe; BBQ chicken kebabs  (Healthy mix IV) which I'll thread on skewers before cooking on the barbie tomorrow.  Will serve with a simple salad. Hopefully they will be nice.

I've frozen the 5 remaining rolls to use as needed.

DS gave us homemade Pea and Ham soup and a SD loaf. All delicious.

The Haloumi Flatbreads from Amanda’s blog. They re heated beautifully. I had them individually wrapped in kitchen paper.

Flatbreads look good Cookie 

The chicken skewers were a success and towards the end of cooking I brushed with some BBQ sauce I made earlier (from the BBQ book on cookidoo - I even bought the bourbon just to make it).  It really intensified the colour and added a lovely flavour to them.  The chicken was so tender and paired nicely with a simple salad of green leaves and cherry toms.
DH had 2 skewers and GS and I had 1.  Will definitely make these again.

I also made apple crisp for the 2 men.  Only a small serve each but they loved it.  When tasting I thought it a bit sweet but they weren't complaining.  The filling only took 6 mins in my electric pressure cooker. I then added the topping (which I mixed in the TM) and grilled it in the same machine.  Served with a scoop of vanilla ice cream.

We are having a stir fry tonight with noodles made in the Pasta maker.
