We have a late appointment today so I have cooked a small leg of lamb, a vegetable bake & tomato and onion dish.

We're having a chicken and spinach in pancake dish from Cookidoo. There are a lot of steps involved so I have done them all early and will assemble and heat it later.

Friends gave us some freshly caught Yellow Belly. There is nothing like fresh fish.
Tic tic way of cooking chips. Simmer until nearly falling to bits. Cool. Place in dish in AF with a little oil. Roast until brown. Toss and cook again until crisp.

Ratatouille lasagna, using the Ratatouille from the roast lamb. Cold roast lamb sandwiches for lunch with leek, celery and potato soup.

Salmon fillets a premix salad with turmeric and apple cider dressing added home grown tomatoes ,avocado. Also first runner beans so good .

GS coming for dinner tonight. Cottage pie from leftover lamb. Dorrie Greenspan Apple Cake. I’ve been dying to try this recipe as it specifies 4 different types of apple.

Cookie, I liked it as it was mostly Apple. You could definitely taste the different Apples. I felt a bit of an idiot at IGA as I put the 4 different Apples on the counter.
Tonight, leftover Cottage pie and Ratatouille lasagna. Apple Cake.
Yesterday I told Ral morning tea was perfect. A cup of good coffee and a recipe book.

Trying not to waste anything. Found 2 leeks in the veggie draw. So made Leek, celery and potato soup. TMX of course.
When I bought the potatoes at the wholesale store, I asked for potatoes suitable for chips. When I asked what sort they were, I was told they call them chippies
Ral loves chips and I have tried several ways to get them very crisp on the outside and fluffy on the inside. Best method ( not deep frying) providing that the correct floury potatoes are used seems to be. ( 1) boil the potato chips until nearly falling apart. (2) strain and cool onto a tea towel. Shake to get some rough edges. (3) place in dish that will fit in AF and spray with oil. (4) cook at 200 until starting to brown, then turn over. Cook until crisp.
I have tried several types of fat. Duck fat is the best but not healthy. Olive oil works well but doesn’t taste right with the potatoes. Rice bran oil is best compromise.

We’re having Pide. I’m not sure what to fill them with. I think one will be egg and cheese and another spinach and fetta. Hopefully they work out.
