Soup and bread of some nature. DH is actually taking DD and I out to lunch today. Nothing fancy but he did offer. DD's holidays finish Friday.

My Dad has a huge smoker.....and smokes heaps of chicken breasts at time....so the freezer is always stocked  8). So much cheaper to do your own.

OMG I love smoked anything but especially whole chickens with the skin on. Does he do smoked lamb? You are a very lucky girl with a clever dad.

He smokes everything Gert.....and uses the branches from our fruit trees.  My All time favourite is smoked eel....Dad doesn't do them, but my Opa did, and my Uncles do......yum!

Pork is one thing we don't eat smoked, actually none of us eat much pork at all really.  My brother is medically not allowed to....only once a year at Christmas as a treat, and honestly....the smell of pork cooking makes me quite ill  ???

I made Crispy Roast Chicken breast and Proscuitto p72 from Nico's book, and Colcannon p15. I didn't buy chicken breast with the skin on (not sure if I've ever seen it) and thought the chicken was nice but dry - skin would've helped to keep the moisture in. The Colcannon I can honestly say that I didnt really follow his recipe as I made mashed potatoes as per EDC not by baking in the oven. I am sure it would have been lovely had I done this but after work I really could not be bothered. The others raved about it and wolfed it down, but being my harshest critic the chicken was dryish and the Colcannon could have been better if I had put more love into it. (*yawn* too tired)
