Just rang my mum and she is really upset. I think we might take her out for dinner. Dads passing away has finally hit her and us all. Next week it will have been 3 months since his passing and also his birthday.
If we don't go out, I will make chicken, leek, bacon & mushroom pies.

Mum didn't want to go out, so we are staying home.
I'm too upset and worried to cook, so DH is cooking sausages and onions for sausage sandwiches.
Will make 2 big pies tomorrow and stick one in the freezer.

Was supposed to be nannygai and smashed potatoes, but there seems to be 100 gallons of soup in this pot, and I don't have enough dishes for it all. So looks like soup is on the menu!!!

Just put a big roast chicken in the oven. There'll be plenty leftover for sandwiches and maybe a frittata or pasta bake. Potatoes, sweet potato and pumpkin about to go in. Roasting lots of sweet potato because we had two huge ones (someone forgot that there was already one in the cupboard when we went shopping yesterday
) so will have leftover roast vegetables too
I'm seeing quite a few meals out of the roast tonight
Steamed cauliflower and brussel sprouts on the side. I can smell the chicken from my computer

I made tortellini today for the first time, filled with chicken, ricotta, spring onions, parmesan, salt & pepper. Took a bit of time at first until I got on a roll, really enjoyed the process, they looked just like little sailor hats.
Served with a lovely, really flavoursome fresh tomato sauce, I was very happy with my first attempt.
I made 90 of the little things, so quite a lot have been frozen on a tray and once firm will be put into bags ready for other nights where I'll only need to cook them and make the sauce for a quick meal.
