That looks really good Maddy,I will give it a go this week.I was a little taken aback at the amount of chicken used in the recipe but when I read on I realized it's to cover  two meals, which is even better ;)

- you don't see the thighs with bone in very much these days.

Probably not so much at the supermarket, but chicken shops would.  Do you have Tasman meats near you?  They have everything!

I was a little taken aback at the amount of chicken used in the recipe but when I read on I realized it's to cover  two meals, which is even better ;)

 The whole lot was polished off  :P  The thigh portions were smaller, and I didn't use 3 of them in the pack (too much visual red stuff for my liking  :-\).......and my hubby works hard and eats lots!!!!  There's never usually leftovers  ;)

I'm making Curry Vegetable Fritters from the Vegetarian cookbook - nice and easy, although a little time-consuming to fry... but so yummy :) So while they cook I've got my laptop in the kitchen so I can check out what you all are doing!  ;D  The kids may be a little disappointed with just the fritters for dinner, so I'm going to make some dessert later - so I'm going to make a peach rice pudding with rapadura & lime syrup, and caramelized peaches.  (Experimenting!)  :)

DD requested smoked chicken (that my Dad smoked), avocado & pine nut pizza's.......again.



My Dad bought a food smoker from Aldi's, not long ago.  It does a wonderful job.  He uses the dry wood from our fruit tree cuttings, I give him a bulk load of chicken breasts....and shazam......heaps of smoked chicken for the freezer  :D

We had Baf's all-in-one meal tonight - haven't done that in ages and had forgotten how delicious it was. The chicken breasts were not huge ones so I only cooked them 8 minutes and they were perfectly cooked & moist.

Maddy's Balsamic Chicken Bake looked so good I thought I would give it a go and so I made it for supper this evening.It's delicious.Thank you Maddy for taking the time to post photo's.They certainly sell a recipe. :)

I made up a gluten free foccacia recipe tonight - it's so yummy!! (Based on my gf pizza base recipe.) We had it with Cabbage Patch Soup - a mince-tomato-cabbage soup with a big blob of mashed potato in the middle. Comfort food :)  (Yes, it's cool enough for soup here - sorry Perth people!)
