I've been cleaning out the cupboards today and found a packet of Marion Grasby's Thai Fish Cake mix. Might make these with pink salmon instead of the white fish she recommends - I've never used one of her packets before so I might need to play around with the recipe a bit to get the right consistency.
I'm trying to use up all the things in my cupboards!

VieveMS I've used Marion's Thai green curry kit when we went away and it was so easy and tasty! I've actually got another one in my pantry on stand by!

Good to hear kt2. I've just opened the packet and it doesn't actually contain anything too complicated by the looks of it:
- red curry paste
- kaffir lime leaves
- fish sauce
- sweet chilli syrup
Not sure how well the salmon will go but I don't have any white fish and can't be bothered making a trip to the shops.

That was last night Hally. Our local Thai only seats about 30 and it's cheap but the food is amazing and very authentic Thai. We hadn't booked last night and luckily we are requlars because they were full up but squeezed us in, quite a few others weren't so lucky and had to settle on take away.
Spagetti bolognese tonight.

Was going to make a pasta bake that I was supposed to have made yesterday, but this morning after making biscuits, I roasted some halved roma toms, an onion cut into wedges, 4 garlic cloves (in their skin), about 6 sprigs of fresh thyme from my garden, drizzled with olive oil, lots of black pepper and a grind of sea salt.
Once roasted, I let cool for a few mins, then put it all through my food mill to get rid of the skins. The resulting sauce was so good that I decided to use it as a base in a pasta dish.
I sautéed a small chopped onion, then added 3 rashers of diced bacon, once they were nearly there, I then added sliced button mushrooms, a knob of butter, good lot of ground white pepper and a few sprigs of fresh thyme. Once turning golden, I added a bunch of asparagus that I’d cut into chunks and sautéed the lot for a couple of mins. I then added 1 clove of crushed garlic and cooked for about 30 secs until aromatic. Added the tomato sauce and stirred to heat through.
I cooked some penne which I served in bowls with the sauce spooned over the top. Topped with grated parmesan and a few baby basil leaves from the garden finished it off nicely. Oh boy was it good. Will def make more of the tomato sauce and bottle it for future use.
