We had spaghetti bog for dinner, using TMX to make sauce. Boys had natural yoghurt for dessert ... DH and I had EDC custard  :D

Chelsea's Creamy Garlic Prawn Rissoto is also delicious ;)

Hi CC, this was the exact recipe I used...I didn't realize it was Chelsea's. Very delicious and is definitely a keeper in our house! There were some leftover from last night and the kids didn't balk at eating it again for tonight's dinner :)

Last night I made chookie's sweet and sour sauce to have over fish and rice with a salad :D

Tonight will be chicken something :)

Tonight I made Jamie’s Cajun Spicy Chicken from his 15 min meals book.

Chicken breasts were rolled in a mixture of Cajun seasoning, salt and polenta then flattened with a rolling pin and pan fried for a few mins until golden and cooked through.

The coriander, tomato, spring onions and grilled corn cob salsa with lime juice went perfectly with it as did the sweet potato mash, flavoured with a little sweet chilli sauce (and a small knob of butter).

Jamie’s meals never disappoint.  :)
