Curry Croquettes (with photo)

Yesterday I was looking at my recipe files which I cut from the magazines and I met this curry croquettes recipe. It really turned to be so great, like those we buy from supermarket, even more delicious

If you don't like curry you can easily exclude it or use some other spices instead. You can adapt it to your taste. I believe also children would enjoy this one



Curry Croquettes:
Number of People: 4
Ingredients:
For 16 Croquettes
550g chicken breast fillets
250 potatoes, peeled and chopped
1 heaped tsp curry
40g bread crumbs
Salt, black pepper

To Steam
650g water

For Coating
20g cold water
1 egg
Flour
Bread crumbs

Optional
You can steam some vegetables in Varoma Tray if you wish



Preparation:
    * Put water in TM Bowl
    * Insert Steaming Basket, put potatoes inside
    * Place chicken fillets in Varoma Bowl
    * Steam all for 25 minutes at Varoma Temperature on Speed 1
    * Set cooked potatoes and chicken aside. Let them cool down
    * Empty water and wash roughly TM Bowl. (If you like you can use steaming water in your soups)
    * Beat egg and water for 20 seconds on Speed 3-4. Put in a bowl
    * After roughly washing TM Bowl, put potatoes, chicken, curry, bread crumbs, salt and black pepper inside and mix for 1 minute on Speed 4. Mix also with TM Spatula a couple of times
    * Get walnut sized pieces from chicken mixture and give them croquette shape
    * Coat them first with flour, then beaten egg and the last with bread crumbs
    * Warm a little oil in a Teflon pan, cook curry croquettes until browned
    * Serve warm or tepid

CP - I made a half mixture and made 9. The only change I'll make next time is to add a bit more curry powder. They were really yum.

Nice one for summer with a salad farfallina.  Could also use leftover cooked chicken, yum.

Yum farfallina - great idea.  Like the idea of having the chicken and potatoes cooked so that they only need a light fry.  :-* :-* :-*

Yes!
Since they are already cooked we just need to brown them a bit
There is no need for deep fry.
