Recipe review - chicken cacciatore from meat on the menu
« on: October 17, 2010, 04:24:00 pm »
Sorry if this has been reviewed before but I couldn't find anything when I searched for it.

Really tasty and easy.

Tweaks I used about 500g of chicken thighs cut into 4's, used only parsley, 2tbsp stock, a whole capsicum and about 10/12 button mushrooms. At the add tomatoes, stock, sugar part of the recipe, I cooked for 8mins on 100 reverse and soft then added the capsicum and mushrooms and cooked for a further 8 mins.
Was delish and enjoyed by all.

4/5 from DH

we make this one too meagan but use the drumsticks. they sort of end up looking slightly worse for wear at the end but the whole dish is really tasty. love it with mashed potato and beans/peas.

Thanks Meagan - don't think it is in the review section, though others have made it.

I used 600g thigh fillets with each cut into 4 pieces - followed Meagan's tip and reduced cooking time.  I also used 2tabsp TMX stock as well as a whole onion and 1 capsicum (I find bits of food a pain) and 1 can diced tomatoes (with basil and oregano}, also added 1 tabsp balsamic vinegar with the tomatoes, etc. No black olives in the house so skipped those.
Placed in thermo-serve while coconut infused rice cooked for 16mins.
This recipe is very tasty so will definitely make again - serves 5 adults.
Thanks for the initial review Meagan.

Cheers

We had this tonight, but I had to make it with chicken breasts cut in half as I forgot to buy the drumsticks. I also cooked cabbage and asparagus in the varoma, the cabbage for the entire 30 minutes and the asparagus for the last fifteen.  I added and additional 100ml of wine for the additional steaming liquid.  Unfortunately only served three adults and a 5 foot tall brat (my much loved but looking for a new home 13 year old daughter ).  One of the adults however was a fifteen year old male who regularly inhales whole fridges.  Will definitely make again.

Snigger  ;D ;D

I only have two Thermy books soon and although I'm already adapting from other recipe books I'm still addicted to recipe books so this thread has prompted me to look into getting Meat on the Menu and Everyday Cooking (I'm in the UK so we get Fast and Easy Cooking with our Thermies)

I'm also frantically replying to posts because I'm fed up of having newbie status  :-))

I forgot to buy tinned tomatoes so I threw in a jar of salsa instead. So much better! going to do this from now on :)
