Sweet and Sour Chicken (with photo)

Name of Recipe:
Sweet and Sour Chicken
Number of People:
4
Ingredients:
3cm piece ginger peeled
2 cloves garlic peeled
1 onion peeled and halved
50g oil
1 tsp raw sugar
4 chicken thighs (approx 600g) cubed bite-size
1 tbsp soy sauce
225g tin pineapple pieces and juice
1 red capsicum chopped
1 roma tomato chopped
Preparation:
Add ginger, garlic and onion
Chop for 2 secs speed 6
Add oil
Sauté for 3 mins Varoma speed 1
Add sugar, chicken thigh cubes
Cook 4 mins Varoma Reverse speed 1
Add 1 tbsp soy sauce, pineapple pieces and juice, capsicum and tomato
Cook further 9 mins 100deg C on Reverse speed 1
Serve with rice or steamed vegetables.

Tips/Hints:
I've adapted the coconut chicken from Thermomix’s Budget Busters cookbook to work with ingredients from a sweet and sour pork recipe from the Woman’s Day “Cooking for Slimmers” cookbook, but keeping the chicken. The original recipe didn't suggest adding corn flour to thicken the sauce which suited me as I have always enjoyed the consistency of the meal.

Katcme - I made this tonight and followed the recipe to a T and ended up with shredded chicken. :/ Was it definitely speed 1 not soft speed?
Amy - after reading Katcme's comment, I cooked it on soft speed and it turned out perfectly.
Lisel - the kids loved it. I'd promised them sweet and sour noodles ages ago and done nothing. This had the ingredients that best fitted my idea of what it should be like and it was a winner. I added a julienned carrot and zucchini to up the veg content and served it over rice noodles.
tanm - Thanks for this recipe. I made it but I left out the ginger and garlic to keep my girls happy and I also added a carrot and zucchini. I found it a bit bland, probably from the lack of garlic and ginger but my girls liked it and ate it all up with no complaining, so that counts as a success in my book.

I decided to give this a whirl for dinner tonight, and after reading Katcme's comment, I cooked it on soft speed and it turned out perfectly

Thanks Gertie. I was very happy with the chicken. It was nice and tender and not mushed up. The flavour was really yummy, and it almost smelled just like a restaurant dish, but I think I overdid the ginger a little bit
