Stone fruits are in season! What will you make?

I need some ideas with what I could make with stone fruits.

Apricots, nectarines and peaches have just come in season here in Geraldton at our local farmers markets and they are just DEVINE!

So what would you make with beautiful stonefruit?  yes, I've probably eaten 1kg of fruit since yesterday morning already... LOL!

Jam , and more jam. Cook some to store in the freezer. Maybe if I knew a way-make jellies from them.
May all dairy items in your fridge be of questionable vintage.

yep jam and lots of boost juice and sorbets ohhh peach cobbler yummy, dried apricots if you have a dehydrator - i really want one of those :D

Oh i didn't even think about dried fruit!  I DO have a dehydrator. :)  Will definitely buy a box of apricots next weekend. Nom nom... Keep the ideas coming. Thanks!

Oh yum judy!!  Will definitely try that with nectarines I think.  Oddly enough we don't get plums up here.  Probably too hot.  Totally drooling thinking about that cake.

We are still a while off down here in Tassie (the apricots on our trees are still small and green), but I have big plans for jams and preserves. I just need to beat the birds to them.  :)

I'm on the lookout for cherry plums to make Tenina's salad - looks so yummy!  And I always buy lots of over-ripe peaches and other stone fruit for fruit cobbler - yum!  (I stew the fruit the Jamie Oliver way, with a vanilla been pod & mixture of fruits - so yummy!)  And jams!  (I de-stone them and freeze them in 500g batches so I can make my naturally sweetened jam from them, in small batches.)  :)

Your taste buds will love you though Kym.  I made it with my GD and sent most of it home with her for their family.  I then had to make myself another one soon afterwards as it was so delicious. Amanda makes great cakes.

I am making plum jam tomorrow.  I've never even attempted jam before but Thelma has given me the confidence to give it a go.
