Thank you for this beautiful recipe! Itis now my number 1.

This is definitey a cake for grown ups as it has bitterness from the lime (which I love!!!).  I also cut down the sugar and used natural yoghurt as I didn't have any sour cream.  I have given away 3 of these cakes now and everyone as asked for the recipe.

On my list to make today,  no sour cream but have yoghurt.  Need something to take for morning tea on Monday do you think it would still be fresh enough. As today's the only chance to make something.

Make it today, wrap tightly in cling wrap Uniced and uncut and it should be fine on Monday.  If you are really worried, chuck it in the freezer and pull out on Sunday night

Unlike everyone else who seems to like the cake, I felt the cake was a bit too bitter and leaves an aftertaste in your mouth. I skinned the seedless lime and followed instructions to the t. Am about to read the last rites before burying it in the bin!

I made this last weekend, well I actually made two the first one I forgot to put the brown sugar in and it came out like a rock, the second i took to a bbq/ bonfire night and it was demolished in minutes we all loved it. Had people asking for the recipe. I used the whole lime, guess it comes down to taste a friend of mine hates  anything with citrus in it, me the more the better.

I have made this heaps ( buget buster date and Lime, similar)i usualy leave my limes on the tree until
I need them, the skin gets thin and less tart. Last time i baked this the lime was not as ripe and it was a more tart taste. I also use the whole lime minus seeds. I think the taste varies depending on how tart the lime.
I Love it but Not my children.

I love citrus and lime taste. I have a feeling the lime which was quite big overwhelmed the taste of everything else.

I usually skin my lime for this cake. I'm not fond of the bitter taste citrus skin can leave.

Goldfish - love that tin you have baked the cake in  :)

A friend of mine makes this cake into muffins. That way she can freeze them and pull one out every day for her morning tea.

I might add she is not a cook - or wasn't until her man gave her a TM for Valentines Day. He was really worried and thought he was in trouble for giving her something so 'un-romantic'. But he earned major brownie points and she is now a "goddess in the kitchen"!

GF I love the cake and tin too.

Good news about your goddess in the kitchen friend Nikkit. She can make lots of romantic dinners.
