Thanks jd! I ended up doing it in the oven, and was so delicious that I just made it again this arvo, love the lemon zest in it,, ready for a bunch of girlfriends coming over tomorrow night, along with the torte caprese, and orange shortbread...... And lets not forget the cocktails! Made a raspberry sorbet to go in a champagne cocktail, and piņa colada.

Do you think you could use a mandolin and slice the sweet potatoes that way? I'm just starting on my vegetarian adventure and am looking at many different Vegetarian meals!

I don't know how thick a mandolin slices things Nighteyes_fitz, if it's close to 6mm I would say yes.

Depending on the mandolin, you can set it to slice different thicknesses. A little experimentation should help you find the correct setting.

We really enjoyed this. I used up some caramelised onion in place of the normal onion which gave it a lovely flavour. Will def make again.

Good idea Julie, it always adds to the flavour. I still have some in the freezer which I use from time to time in recipes when I remember it's there.
