'Smashed' baked potatoes

Name of Recipe: Smashed Baked Potatoes from Nico Moretti's Cooking Passions

Number of People: This recipe is for 12 potatoes which would be enough for 3 or 4 people as a side dish.

Ingredients:

12 small potatoes
Extra virgin olive oil to drizzle or use a can of spray
1/2 cup bacon, diced finely
or 1/2 tblspn fennel seeds if you prefer

Preparation:
Pour 600mls boiling water in the TM bowl, place the steaming basket in place, add the potatoes and cook until just cooked. I did mine for 20 minutes/varoma temp/speed 3.
Place on a tray lined with baking paper, and after they have cooled down a little, flatten them until the skin breaks with the heel of your hand (or use a potato masher if you have one).
Drizzle half with the oil and scatter the fennel seeds over the top along with some S & P.  The others, just scatter some of the bacon over each one. I did all bacon but did drizzle a little oil onto them.
Bake for 25-30 minutes 220oC or until crisp and golden.
Serve immediately with or withour sour cream and/or sweet chilli sauce.

mmm sounds lovely. And I'm sure there could be many variations.
Butter, tomato, olives, feta, other cheeses, well guess just about anything, just thinking what would go down well in our house, lol.

We made these tonight as a side and really loved them. They ended up a lot more "smashed" than yours JD due to my kitchen helpers but I don't think it mattered. They were very crunchy and tasty.  I took them out after 20 minutes as the bacon was starting to burn.  Thanks for posting this great recipe JD.  :)
