Soaking Grains

Would anyone have any sort of recipes for soaking wholemeal flour for the use of making bread???  Have tried using 3 cups of flour with 1 1/2 cups of water, 2 tblsp of yoghurt, 1tbls of oil , 1/2 cup rolled oats, 1/4cup sunflower seeds, linseeds, chai seeds and 1/4 tsp yeast, and as you can guess it has turned out like a little brick again. So if anyone can help out I would appreciate it muchly, Thanks Sandy

Sandy I have been trying to make soaked wholegrain loaves for months now and haven't found a successful combination yet using 100% wholegrain flour (TMX milled).  Basically I have found unless you are happy with a very dense/chewy loaf you either need to use a bread improver/enhancer (which I am not happy to use) or use a minimum of 1/3 unbleached "white" flour in your loaves.  Hope this helps.  There are a few soaked loaves on my blog to check out also.  Click on the bread label and they should all come up. :)

Thanks for all your replies.  Chelsea after reading your reply I might try soaking 2 cups of wholemeal flour with 300 ml of water and maybe 3tblsp of kefir whey overnight and then adding the rest of the ingredients the next day using 1 cup of white bakers flour and seeing how that turns out. I will let you know how it turns out. Sandy
