We certainly don't go through anywhere near as many as any of you.  DH will not eat a cooked breakfast, cold cereal it must be but I can give him eggs for tea when we've had a big lunch.  I never keep count, just buy them as I need them and would never not do a recipe because I thought there were too many eggs in it.

It fluctuates in my house from week to week, sometimes a dozen other times it's more.

I'm a single person but I manage to use a lot of eggs in baking.  I get eggs delivered by a man who raises and shows "ornamental" poultry and they do produce eggs, sometime spectacular ones.  I never know what color I will get because most are brown but there are always some aqua, some a dark mahogany brown and occasionally pink ones.  They look like colored Easter eggs.  
He also includes guinea hen eggs on some occasions and more rarely duck eggs.  

He usually brings me  three dozen every two weeks but sometimes I have to buy more at the store if I'm doing a lot of baking or making something like meringues or sponge cakes that take a lot of eggs.  (I have one recipe that uses 20 egg whites!)  


The elongated egg with the pointy end right in the center is from one variety of guinea hen and the very pale blue one in the upper right is another variety of guinea.  He has another variety that produces buff colored eggs with black speckles but he only has a few of them and rarely includes their, much smaller, eggs in my basket.  These are almost alll large or extra large size.

we too love our eggs, i would say we would go through 3 or 4 dozen a week. i have a fussy 3 yr old who loves eggs so we all have scrambled eggs for brekky each morn, sometimes he will want them for dinner, then add in all the cooking we do.  i really think they great for you, and i find myself craving them when i have been doing lots of exercise.

Great for decorating for Easter.  Do they lose their colour when boiled Andi - I guess not. I have never seen a basket of naturally coloured eggs before, thanks for the lovely picture.

What gorgeous eggs! I wouldn't be able to crack those blue ones.

We go through about 3 dozen or so, depending on whether I'm home to cook. I've been busy with my business and with local government, - meetings, meetings!
I can buy free range from our local store, since my DD's chook yard still needs to be fixed to keep out the foxes.
A great cook is one who can rustle up a fabulous family meal with some freezer burnt chops, wilted carrots, sprouting potatoes and cabbage that's gone brown on the cut edges.

It's amazing the colors that some exotic poultry produce.  

The most famous are the Araucana chickens, made famous by Martha Stewart at her place in the Hamptons, where she had a good-sized flock.
Some people are cross breeding some varieties to get chickens that lay eggs of more than one color - they are loosely called Easter Egg chickens in the U.S. and most serious breeders are not wild about this as you really never know what the offspring will produce, if at all.

They don't lose much color when boiled, unless I add vinegar to the water. 

Sam has one breed of chicken that lays light brown eggs with tiny red speckles.  So far he has only three hens of this breed and they are seasonal layers and when the hens begin laying in the spring, he plans on keeping all the eggs to incubate.

Some of his chickens are housed with roosters and as I prefer eggs that have not been fertilized, he brings me eggs from the hens that are kept separate.

Andi,  these are just beautiful.   My chooks are ISA Browns,  little egg laying machines.  Very ordinary looking eggs.  They lay 1 a day for a year,  and then mostly stop laying or lay an egg every couple of days.

Bluesed I wondered who could possibly use that many eggs until I saw who it was posting. I had a good laugh.

It depend on whether or not I'm have a protein shake for breakfast.  If I am having one everyday then DH usually does too soo that's at least 1 dozen there plus the baking.  So I'd say 2 - 3 dozen.  Our 9 chooks aren't the best layers and some of the eggs also get given to some of our staff (the chooks are at work) so I usually have to buy a dozen or so every couple of weeks.
