help with lemon sorbet please

So I tried it with the whole lemons, even though I thought it would be bitter, and it was, it was terrible!

So I cut all the pith off, so I only had the lemon flesh left, did that, and it's still bitter!

Am I doing something wrong, or is it just the lemons I'm using maybe?

I always make lemon sorbet with some zest from the lemon, then cut off the rest of the skin and pith. (Remove seeds if there are any). 150g lemon 100g sugar (I use rapadura) Nice and tangy. Nit bitter.

What amount of sugar are you using?

I did a half serve, as I wanted so much ice on the first one  :-))

so 150gms of lemon, a teeny bit of zest, I did leave the seeds in, perhaps that's the issue? and 75gm's of sugar. I'm using up my sugar stores, so it was white sugar, blitzed to icing.
