Master class - making Canapés

I've been away for a Hen's Party Cooking Class!!! This is what we made:
Canapés
1) Freshly made Makizushi (sushi)
2) Confit Duck and Foie Gras tortellini w/ lemon Beurre Blanc
3) Mushroom Galette Confit Cherry Tomato
4) Beef Kofta with a Mint Raita
5) Salmon Perls with a Verjuice Dressing
Has anyone had the second one??? Do you know what it is??? Goose Liver - we were all like "what!!!!" but it was the most divine little morsel ever!! And guess what I even won ~ a bottle of wine.
LOL - ok I've had my little boast now - I have all these recipes if anyone is interested.

Hi Nay-Nay,
Can you post the Beef Kofta one. My husband loves these, and I have tried to make them once before but they werent very nice
sounds like yours will be a winner though. Congrats on the wine!

Sure thing - tell me how it works out. You can easily mix up meat mixture and then Raita in TMX.
Beef Kofta with a Mint Raita
Beef Kofta
1) Finely dice an onion and place it in a bowl with beef mince, turmeric, cayenne
pepper, mint, salt and pepper.
2) Use your hands to press the mixture together into small logs, place a on the
end of a small bamboo skewer.
3) Cook on grill or under pre-heated gril.
Mint Raita
1) Cut a cucumber down the middle and remove the ends, and scoop the seeds
out with a spoon.
2) Dice the cucumber very finely and place in a bowl, mix with cumin, cayenne
pepper, lemon juice, mint and salt and pepper.
Presentation
Place the Beef Kofta skewers on a plate and drizzle with the Raita.

Yep - this was sooo very easy but yummy! I'm not sure where I would source the caviar
Salmon Pearls with a Verjuice Dressing
1) Very finely dice spring onions and chives place in a bowl and add salmon eggs. Bring it together.
2) In another bowl pour verjuice into it and add a splash of Botrytis Semillon, whisk
and add a small amount of olive oil.
Presentation
In a Chinese spoon place onion and shallot mixture. Whisk then pour the verjuice
dressing over the top.

What a wonderful idea for a hens party!!! I have just been on a hens day too. We drove around the countryside on a bus, drinking champagne and having high tea at a rather posh hotel whilst wearing decorated thongs. I think the cooking class sounds like more my style!

The mind boggles - just imagine a bus full of girls in their decorated G-strings!!! ~ that have been drinking champagne!!! Sounds more like a Bucks Night!
